Veggie Broth with Miso + Coconut Milk Soup

 

Nothing beats a warm, comforting bowl of hearty soup. This soup, made with Kroma’s Veggie Broth with Plant Protein, is a healthy, unassuming, bursting-with-flavor dish that’s sure to leave you feeling warm and fuzzy.

INGREDIENTS

¼ C Kroma Veggie Broth with Plant Protein

6oz Unsweetened coconut milk

¼ C Tofu, drained + cut into small pieces

½ Ginger, peeled + diced

¼ C Mushrooms, chopped

1 Lime, juice

3-5 Jalapeños, sliced

Cilantro, handful

 

DIRECTIONS

  1. Bring 10oz of water to a boil, then reduce to medium heat 
  2. Add Kroma Veggie Broth and ginger
  3. Cook for 3 minutes
  4. Add unsweetened coconut milk, mushrooms, and tofu
  5. Bring to a simmer
  6. Add lime juice, jalapeños, and cilantro
  7. Cook for 1 minute
